For the crust

3 tablespoons very cold water

For the filling

Nonstick spray oil, for coating pan

3/4 cup cream cheese, soft at room temperature

2/3 cup half-and-half or 1/3 cup each whole milk and heavy cream

6 large eggs

2 10-ounce packages frozen chopped spinach, thawed

1 cup grated cheddar or gruyere

1/2 cup finely grated Parmesan

1 small bundle thinly sliced

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper
