Ingredients

1 tablespoon extra-virgin olive oil

1 small onion, diced

1 red bell pepper, sliced into thin strips

1 medium jalapeño, seeded and minced (optional)

1/2 cup frozen or fresh corn

One 14-ounce can black beans, drained and rinsed

1/2 cup Fresh Cherry Tomato Salsa or any salsa, plus more for serving

1 teaspoon ground cumin

1 teaspoon garlic powder, to taste

1/2 to 3/4 teaspoons fine sea salt, to taste

1 cup fresh cilantro, roughly chopped, plus more for garnish

6 medium (or 8 small) corn or flour tortillas

1 large avocado, pitted and sliced

Fresh lime juice, for serving
